Pomona begins with distilling our Brut Cider into a strong brandy. The brandy is blended with freshly pressed apple cider, then aged one year in bourbon barrels.

Late harvest heirloom apples are pressed at the peak of ripeness, frozen through long, bitter winter nights, then slowly cold fermented. The result — a cider that is the pure essence of apple, with a perfect balance of sweetness and acidity. Serve chilled for dessert.
